Patra, also known as alu vadi or patrode, is a traditional vegetarian snack from the Indian state of Gujarat. It is made by layering steamed and thinly sliced colocasia leaves with a spicy and tangy chickpea flour batter, rolled up, and then steamed again until fully cooked. The batter for patra is made by mixing chickpea flour with a blend of spices such as chili powder, turmeric, cumin, coriander, and ginger-garlic paste. Once the colocasia leaves are rolled up with the batter, they are sliced into rounds and steamed until fully cooked. Patra is often served with a drizzle of tempered mustard and sesame seed oil and makes for a delicious and healthy snack or appetizer.
